After a visit to Southbrook<\/a>, it is direction Redstone Winery, the little brother of Tawse<\/a> of which I will speak to you in a next post. At Redstone, it’s a bit different from the other places we’ve visited. There is no cellar or processing on site, the whole is a few kilometers away, at Tawse. The “winery” was created to make a place for receptions, which was impossible to do at Tawse since no new construction is permitted on the Niagara Escarpment since the latter is part of Of the UNESCO World Biosphere Reserve.<\/p>\n\n\n\n

Redstone Winery:Pairings and Biodynamic<\/h2>\n\n\n\n

Redstone Winery, named after the red clay soil and the large stones that define the terroir of the property, is the latest achievement by Moray Tawse, founder of the highly awarded estate that bears his name. Like his big brother Tawse, Redstone is also in biodynamics. The same type as Southbrook I told you about a few days ago, so for this reason, if you are on the beautiful terrace, you will be surrounded by bees. The estate, with its restaurant and reception hall is more targeted for a younger audience. People also seem more in a hurry during visits.<\/p>\n\n\n

A fast tasting at Redstone Winery<\/h2>\n\n\n

After the great tasting at Southbrook, we were a bit full, we tasted less wine and more enjoy the dining facilities of the place to eat a bit.<\/p>\n\n\n\n

Whites and sparkling<\/strong><\/h2>\n\n\n\n

Made from a blend of Chardonnay, Pinot Gris and Pinot Noir grape varieties and aged 18 months on lees, Redstone Sparkling displays delicate notes of baked apple, coconut and a fine mousse persistent. At a price of $ 24.95 per bottle, it’s really very affordable!<\/p>\n\n\n\n

2013 Riesling Limestone South<\/strong><\/p>\n\n\n

Second cuv\u00e9e of the southern block of the Limestone vineyard. Located on the Twenty Mile, this land is 14 years old, and is also the block is sustainably grown in biodynamic like Pinot. Made from hand-picked grapes, this fragrant wine displays tantalizing notes of honeysuckle, candied orange and a hint of minerality. The more mineral riesling is common in the Niagara, very different from the Alsatian rieslings. A less sweet taste and easier to drink with a meal rather than with an entry. The price is $ 18.95 per bottle.<\/p>\n\n\n\n

The Reds<\/h2>\n\n\n\n

2012 Pinot Noir Limestone Vineyard<\/strong><\/p>\n\n\n

As I love the Pinot Noir, I was eager to taste this first vintage Limestone vineyard. Located on the Twenty Mile Bench, a 16 year old land, cultivated in a sustainable way in biodynamics. The wine is aged for 16 months in French oak barrels, which gives this wine notes of black cherry, raspberry, complemented by earthy and floral notes. In short, a good pinot, easy to drink. The retail price is 29.95 per bottle.<\/p>\n\n\n\n

I also remember having tasted a ros\u00e9, but I can not remember the name, but it was a little too sweet for my taste with a taste approaching the strawberry.<\/p>\n\n\n\n

They have many Redstone products at the LCBO and at the SAQ. Take a look.<\/p>\n\n\n

The restaurant, the biggest addition to Redstone Winery<\/h2>\n\n\n\n

Restaurants that serve interesting dishes other than junk food, are quite hard to find in the area, however, Redstone offers a full restaurant, with gorgeous dishes. It’s a shame that we had to do another round at Hidden Bench<\/a> afterwards to meet Harald, as I think we could have spent the evening so the place is beautiful and the tantalizing menu<\/a> made with ingredients from the area.<\/p>\n\n\n
