I decided to start a new series to share my encounters with the different wine professionals, the wine regions. It is the absolute reference in the production of Chardonnay (48%) and Pinot Noir (34%) of character. White dominates mostly even if the great red wines of Burgundy make the area famous.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The appellations express the diversity of characters of Burgundy wines. Depending on the season, the vineyard benefits from ocean influences (spring and autumn), continental (winter) or southern (summer) influences. Les Climats transmits to each Appellation de Bourgogne a unique and remarkable organoleptic personality. More than 600 climates classified as \u00ab Premiers Crus \u00bb make up the Burgundy vineyard.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Les clos: the illustration of Burgundy Climates<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>In Burgundy, an enclosure corresponds to a climate surrounded by walls.<\/li>\n\n\n\n<li>World-renowned, the closes have shaped the landscape of the vineyard of Burgundy.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Even though it is &#8220;traditional&#8221;, viticulture in Burgundy is constantly in motion and in search of excellence with its respectful approach to the vineyard, the land and the terroir, its non-interventionist methods of winemaking, its cultural practices and techniques of the wines that make reference and a constant search for quality, while respecting existing know-how.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A few points of reference to guide you in the sensory discovery of the white wines of Burgundy.<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Colors et nuances :<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>White gold<\/li>\n\n\n\n<li>green gold<\/li>\n\n\n\n<li>dark golden<\/li>\n\n\n\n<li>yellow\u00a0green<\/li>\n\n\n\n<li>straw yellow<\/li>\n\n\n\n<li>pale yellow<\/li>\n\n\n\n<li>orange yellow,<\/li>\n\n\n\n<li>dark yellow<\/li>\n\n\n\n<li>etc.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">The Aromatic families:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Plant scents and aromas can indicate young and\u00a0fresh wines: mint, fern, tobacco, blackcurrant bud\u2026<\/li>\n\n\n\n<li>Floral notes are a sign of a distinguished and delicate\u00a0wine: limewood, camomile, verbena, hawthorn, rose,\u00a0honeysuckle, wild rose, acacia, broom\u2026<\/li>\n\n\n\n<li>Notes of fresh fruit, citrus fruits and exotic fruits\u00a0unfold in young white wines: quince, pear, apple,\u00a0peach, lemon, grapefruit, exotic fruits<\/li>\n\n\n\n<li>Notes of dry fruits can be found in wines that are\u00a0beginning to age and demonstrate the complexity\u00a0of Burgundy wines: apricot, hazelnut (linked to barrel\u00a0ageing), almond, walnut, orange peel\u2026<\/li>\n\n\n\n<li>Spicy notes, just like in cooking, can be uncovered in\u00a0wine. They\u00a0express the characteristics of the Pinot Noir grape:\u00a0raspberry, cherry, blackberry, blackcurrant, wild berries,\u00a0redcurrant\u2026<\/li>\n\n\n\n<li>Floral notes are very subtle. An aroma of rose often\u00a0appears in great red wines that have aged: rose, violet,\u00a0peony\u2026<\/li>\n\n\n\n<li>Plant aromas can indicate young, fresh wines:\u00a0blackcurrant bud, cut grass, tobacco\u2026<\/li>\n\n\n\n<li>Notes of cooked fruit indicate a wine that has been\u00a0processed using very mature grapes and they often\u00a0indicate a vintage of very rich wines: fig, jam, prunes\u2026<\/li>\n\n\n\n<li>Spicy notes are generally a result of wine that has\u00a0been left in a barrel. They can be noted in red wines\u00a0through both the smell and the taste: cinnamon,\u00a0gingerbread, bay\u2026<\/li>\n\n\n\n<li>Notes of coffee or liquorice are also often a result\u00a0of time spent in a barrel. Aromas of caramel reveal\u00a0old and mature wines: liquorice, grilled almonds\u2026<\/li>\n\n\n\n<li>Animal notes often unfold in old wines. At this stage,\u00a0fruit notes have often disappeared: meat, game, musk,\u00a0wild animals\u2026<\/li>\n\n\n\n<li>Notes of undergrowth evoke the smell of dampened\u00a0earth.
