To the south of the Champagne appellation sits the Côte des Bar region, where the best plots are dedicated to producing a surprising sparkling wine in organic conversion! This rosé de saignée offers a wide range of complex, fine aromas, aged for 3 years or more on laths and made from 20% reserve (older) wines! With its rosy colour and aromas of strawberry, cherry and raspberry, it’s brioche-like, round and has a mineral feel that radiates on the palate, all at a bargain price! Clos du Moulin aux Moines Monthélie Sous le Cellier Bourgogne 2020
A historical site in Burgundy’s Côte de Beaune region, Clos du Moulin aux Moines was founded in 962. The care taken with the vines speaks for itself, following the principles of organic farming and biodynamics. This wine is beautifully matured on fine lees, giving it a delightful texture. A harmony of yellow apple, honeysuckle, fine caramel and beeswax make this an elegant, long and princely wine. The perfect partner for a grand meal of guinea fowl or poultry in a cream and morels sauce, or seafood. Distinguished and sapid. Borgogno Langhe Nebbiolo 2021
Rediscover the wines of the rolling Piedmont with one of the oldest wineries, dating back to 1761 and in the process of converting to organic production. Everything Borgogno produces is splendid, whatever the vintage. An oratorio of bright crisp berries, mauve flowers including dried rose, fine captivating oak, nutmeg, it has fresh acidity, is intense and long on the palate. A baby Barolo (the ones they make are excellent, by the way) in a way, and what a thrill it is! A pasta dish with tomatoes and herbs or a veal osso buco with mushrooms will be embellished and ennobled. Racy and magnificent.
