Château de Rouillac Le Dada de Rouillac Pessac-Léognan 2020
“To be Dada” is above all to be passionate in the French language. Laurent Cisneros associates the world of wine and that of horses through his two great passions, which he shares in particular with his daughter Mélanie during national show jumping competitions. What an exquisite pleasure this full-bodied, energetic white from Bordeaux’s magnificent Left Bank provides for a launch! The apple, peach and herbaceous flavours waltz in and the lees ageing give it a lovely texture. Scallops with herbs and citrus or a white fish with a dash of lemon will be embellished. Dazzling!

Tavignano O Love Monsters La Vergine Marche 2021
The Marche region of Italy, on the shores of the Adriatic Sea, holds many well-kept secrets, such as this organic orange wine, which by its presentation and singular taste transports us to this Mediterranean climate. A white maceration wine that glides on the palate, with silky and refined tannins. Sunshine in the glass means drinking a bright fruit: yellow apples, ripe pears, exotic fruits, orange blossom; it dances and lengthens in the mouth, inviting smoked or gravlax salmon, chicken or vegetable tapas, or even a shrimp and mango salad. Tip: don’t serve it too cold, you’ll lose the flavours, and a short time decanting or turning in the glass can give it wings! Delightful!

Monte Creek Living Land Cabernet Merlot 2019
Finally, the charm of the West Coast of British Columbia, this vineyard being located on the banks of the Thompson River in Kamloops, not far from the Okanagan Valley. Located between the majestic Rocky Mountains, it is undergoing organic conversion planned for 2023. A symphony of ripe kirsch cherry and jammy berry fruit with mellow tannins and fine woody notes elevate the experience. A high drinkability and wellness index and an explosion of flavours on the palate that will impress guests. A sublime pairing with medium-rare grilled beef, or carpaccio with rosemary, even tuna tataki. Moving!
