Wines and Spirits Volume 1 – Winter Elegance opens the winter season with a refined selection of bottles designed to warm and delight discerning palates. Some have taken on the “28-Day Alcohol-Free Challenge” in February, others the “Dry January”; at Gentologie, we prefer to offer sophisticated options to enjoy wines and spirits with pleasure. The key remains moderation throughout the year, allowing you to fully savor each experience without excess. Here are some of our recommendations from this exceptional first volume.

Tom Gore Chardonnay

This Chardonnay has intense aromas of ripe apple and pear, complemented by notes of brown spice and toasted oak. The wine has ripe fruit flavours with a smooth, creamy texture and a long, full finish. Great with a tasty roast chicken or maybe something with a creamy sauce. A great wine that you will want as a companion.

Stratus Vineyards Tollgate Chardonnay 2017

Stratus is at the gates of Niagara-on-the-Lake. The grapes come from two plots in this sunny micro-climate; the approach is Burgundian and the bâtonnage of the lees brings a beautiful texture with accents of ripe apple, pear, peach, roasted nuts, almond, all carried by refreshing acidity with 5–7 months of aging (15% new wood). This gives a slightly buttery side with a nice texture and length in the mouth. What’s more, the vineyard is LEED certified. It will pair beautifully with smoked salmon, garlic butter lobster, or a fish in sauce—and for those who don’t enjoy red, why not try it with a grilled flank steak?

Cantina Girlan Pinot Bianco Alto Adige Sudtirol 2018

In northern Italy at an altitude of 450–500 m, the Pinot Bianco from which it comes is cultivated. Delightful aromas of yellow apple, white pear, and white flowers charm the senses. Fresh almond and a suave texture—thanks in part to aging on the lees—offer a long finish. Splendour and fullness are apt descriptions. It will shine with a fresh or grilled shrimp salad, or with a salmon pâté.

Domaine de Fenouillet, Faugères Hautes Combes 2018

It is the wild fennel surrounding the vines that inspired its name. The vineyard’s altitude (300 m), schist soils, and Mediterranean climate create something luminous—time almost seems to stand still. Harmony of yellow apple, pear, white flowers, beeswax, and spices, with precision and remarkable length in the mouth. A wine of high environmental value, ideal with cooked pressed cheeses, pan-seared scallops, or veal blanquette.

Zonin Valpolicella Ripasso Superiore DOC

What a delicious wine! Perfect for winter with its freshness and moderate tannins. There are fruity notes of wild berries, woody tobacco and cherry too. An Italian wine that will certainly warm you up and will be perfect with roasted meats. Those at our Holiday Magazine Launch had the pleasure to taste it

Vanessa Aubert Château d’Anielle

Fruit first in this bottle from the brand new Vignobles Aubert vineyard. A magnificent Bordeaux that is this Saint-Émilion Grand Cru. Merlot easily prevails over Cabernet Franc with the fruit and flexibility of this great wine!

Rosso Di Montalcino Il Poggione 2016

This Italian wine from southern Tuscany feels like a mini Brunello! A transcendent nose of cherry and cranberry, delicate woodiness (aged in large casks and barrels), balanced acidity, and warmth (14% alcohol). Caressing and long on the palate. Try it with a bistecca alla fiorentina, veal parmigiana, stuffed peppers, or any hearty dish. A short decanting is recommended.

Mirafore Barolo 2013

A small gem from sunny Piedmont! A transcendent nose with cherry pit, wilted roses, and sweet spice aromas (nutmeg). Silky tannins after two years in oak casks. Warm (14% alcohol), deep, and long in the mouth. Perfect with black pepper steak, game in red wine, or a Munster cheese. If unavailable, try the Mirafiore Langhe 2014—you won’t be disappointed.

Domaine La Tour Vieille Collioure La Pinède 2018

The Collioure region, full of sun and sea breeze, offers a warm Mediterranean climate. The fruit is ripe—black cherry, raisin, date—with silky tannins and cocoa notes on the finish. Serve slightly chilled (around 16 °C). Pairs beautifully with rosemary mustard lamb, rabbit, or soft cheeses like brie or camembert. Bollinger Rosé

Here is the Rosé Champagne that James Bond, or as we called him, 007, would choose. While he always chooses the Bollinger since a few decades. The latter offers notes of red fruits like cherry and strawberry as much on the nose as on the palate. The presence of red wine is felt among these fine bubbles. A pleasure to share whether with salmon or lobster.. even in winter it can be a delicious for a romantic or luxurious dinner.
