While the program Les Chefs aired on Radio-Canada (CBC French version) on Monday, April 20 showcases the skills of the chefs with fresh pasta, here I am, too, a few weeks ago. It’s thanks to the Pack It Up company kit (you can order yours here )

Why make fresh pasta?

Firstly because you have the time right now, and even that, it does not take very long to do. Just take your time, you’re going to like it. The Marcato, it’s probably one of the best machines on the market, Massimo Vincelli from Conserva, who presents the machine, told me that it was really a high-end kit that we find. The machine is made in Italy, and it allows you to make, with this starter set, 3 kinds of pasta: Lasagna, tagliatelle and taglionis.

As I said, several accessories are easy to find for the machine in Italian specialty shops.

What do I need to make my fresh pasta?

You don’t need much. Eggs, type 00 bread and dough flour, semolina (not necessary, but to give your pasta a more yellow color, it is necessary and water. Nothing could be easier.

What to do.

You must start by making your dough, the instructions are with the kit, and then wait about 1 hour of rest for the latter.

Then you put them in the machine, do not hesitate to use a lot of flour so that it does not stick, keep a bowl of flour not too far away.

Dry your pasta on the rack if you are not going to eat it right away. Longer than not enough I would tell you, otherwise it will stick.
