Several restaurants will certainly be in high demand over the coming days, so dear guests, please be patient regarding availability and reservations. Also, if you make a reservation, please honour it — penalties can now be imposed for no-shows!
This new Québec selection, as we mentioned in this article, will not deviate from the rule. It follows the historic methodology of the MICHELIN Guide, based on five universal criteria that ensure each establishment is evaluated fairly: 1) quality of ingredients; 2) harmony of flavours; 3) mastery of technique; 4) the chef’s personality and voice expressed through their cuisine; 5) consistency across visits and throughout the menu. It is worth noting that each establishment is inspected several times per year, confidentially.
The Recipient Restaurants of the 2026 Michelin Guide Québec
Based on the quality of their offering, establishments receive one, two, or three MICHELIN Stars (in France, these are referred to as Macarons). Without further ado, here are the recipient restaurants of the 2026 Michelin Guide Québec (New in 2026: *)

1 Green Star
The MICHELIN Green Star transcends the other distinctions of the MICHELIN Guide and may be awarded to any type of establishment featured in the Guide, regardless of whether it holds a culinary distinction (Bib Gourmand or MICHELIN Stars). It celebrates those most committed to eco-responsible gastronomy and their concrete initiatives. From sourcing awareness to respect for seasonality, waste management, and the capacity of restaurant teams to engage their guests in the establishment’s sustainable approach — these initiatives can take many forms, depending on the challenges and resources specific to each restaurant. There is therefore no set formula or fixed criteria. The MICHELIN Guide simply wishes to highlight the most remarkable commitments and encourage the creativity restaurateurs demonstrate in imagining new avenues for action every day.
