The apotheosis in cava shines with its 42 months of aging on slats giving it elegance and complexity. A symphony of orchard fruits, white peach, nectarines, melon, white plum, honeysuckle, mushroom, brioche, breadcrumbs, toasted almonds and beeswax characterize it. In addition it is creamy, complex, the bubbles are very fine, what length in the mouth! Serve around 8 degrees C with smoked salmon blinis, tapas or a quiche for brunch or aperitif. The Calabria region evokes the sun and the sweetness of life. Cantine Benvenuto is committed to the protection of nature by adopting organic techniques. Here the Zibbibo (or Muscat of Alexandria) gives this orange and natural wine a unique touch, and everything is vinified dry (1.3 g/L of sugar) although this variety can also produce good liquorish wines. An oratorio of strawberries, currants, orange blossom, all with a satisfying mouth, a strong personality and a beautiful length. Think pizza a grilled vegetables, burrata tomatoes and basil, ratatouille Complimentary.

The La Clape massif has a dry and arid climate, it is also one of the sunniest places in France (up to 3,000 hours of sunshine per year). It is fortunately swept by 13 winds, including the tramontana; this brings freshness to this wine. The soil is clay-limestone and saline loam. A requiem of black and ripe red fruits, mauve flowers, spices, olives, cocoa, it is woody (12 months aging in barrels), full-bodied, long in the mouth and definitely a comfort wine. In addition, the old vines give it character and are planted in the Natura zone, in the organic spirit and in HVE. A delight served at 16 degrees with slightly rare grilled meat. Heady.
