Sartori cheese, the little Italian cheese from Wisconsin
You might know the cheese I am going to talk about today, or maybe not. Although it is on sale in several cheese shops, I doubt that a large majority dared to try it. Sartori cheese is a cheese that dares. It’s a cheese factory that does different things. The reason I’m telling you this is that a few weeks (at the original date of this article) ago they sent me their products, after I mentioned them in a publication. You can well imagine that it is not easy to bring cheese from the United States. In short, let me tell you the story.
I discovered the company a few years ago, at the Fromagerie Hamel, that of Ahuntsic if I remember correctly, since it was close to the place where I lived at the time. It has piqued my curiosity with its different flavours: The Merlot BellaVitano and Espresso BellaVitano, whose crusts are respectively washed with a Merlot wine and espresso, and are very delicious.

The answer is simple, Sartori cheese has expressed its interest for a long time through this website while this is the case of no cheese from Québec, the reason is simple and people are really fun and they also very on point on Social Media.

It is that crazyness that dwells in this company that dares to do things differently, for our first collaboration, they sent me 4 cheeses (which I chose) either Chipotle BellaVitano, Balsamic BellaVitano, Peppermint BellaVitano and The Classic Cheese Parmesan. Personally, well before collaborating with them, it was probably my favorite cheese company. What’s better than for someone who makes wine and food publications that agree wine, beers and cheeses.

I chose 4 cheeses that I had never seen here (The Balsamic BellaVitano just arrived at the time). And I tested several possible combinations with different products. As the photos were uploaded few years ago, I switch most of them to the ones of the Sartori, which are more beautiful.

Personally in Quebec, I have never seen cheeses that are also different in their compositions, yes we make good cheeses, but let’s face it, they are rather classical. What I like about Sartori is that they dare to create something different, a little like spirits or some wines where you can mix tastes to get interesting tastes. You certainly want to try the Garlic & Herbs variety with our James Bond Vodka Martini recipe… with many olives on the side.

I loved all the cheeses, but I had a preference for the Balsamic BellaVitano who comes for notes of walnuts, fruit, and the addition of the balsamic vinegar from Modena brings a little I do not know what, a little acidity with the cheese that makes the taste in mouth impeccable. As for the Chipotle BellaVitano, it’s quite surprising, the Chipotle chili kick is pretty present, enough to make you say a little ouff. Present, but nice too, because it will add, as I said in the description of the photo above, a little spicy taste to dishes a little lighter and less seasoned.

As for the last cheese I tasted, the one with peppermint, it is small accents of Christmas that stand out with the presence of an aroma that is close to the candy cane of Christmas, not too intense, but present all the same time. A festive cheese produced in limited edition.
