Pet nat (Pétillant naturel) is a method of producing sparkling wines that dates back centuries. It is a natural approach where the grape must ferment in the bottle, producing the bubbles (carbon dioxide) during the process. Unlike other methods, Pet nat is often not disgorged, giving it a natural character and lively aromas.
